Easy Oatmeal Raisin Greek Yogurt Muffins that are refined sugar free, protein-packed, and a great back to school snack! They’re fluffy, just the right amount of sweet, and you can throw one in your bag or grab one as you head out the door for a busy day.
I’ve been working on perfecting my muffin recipe for a while now. The first attempt was with almond flour and it just wouldn’t come together. After baking for an HOUR the outside would be hard and rubbery, and the inside stayed completely raw. Maybe one day I’ll perfect the almond flour muffin, but for now, the Oatmeal Raisin Greek Yogurt Muffins are doing the trick!
These muffins are sweetened with honey, making them refined sugar free. I also subbed in Nancy’s Greek Yogurt for oil or butter, using just a 1/4 cup of coconut oil. The Greek yogurt makes these muffins higher in protein, moist, and tasty. If you’re on of those people who cringe at the word moist, I’m sorry. But until I can find a better adjective to use in its place, I gotta do what I gotta do!
As summer comes to an end and kids go back to school and we return to normal scheduling, it’s important to get back into a good eating routine. I NEED to have snacks prepped. On super busy days, having breakfast prepped helps me get a workout in and get to work on time.
This week I’m collaborating with some of my favorite health bloggers to bring you Back to School Fuel. Each day we are sharing a recipe that’s packed with nutrients and energy to get you through a busy week. If you missed the first day, make sure you head over to Instagram to check it out! And be sure to stay tuned through the rest of the week because these ladies of whipped up some super yummy treats for you!
But back to these Oatmeal Raisin Greek Yogurt Muffins. They were gone in 3 days. No joke. When muffins are around, I find myself aimlessly waking to the muffin tin and breaking off a piece. Then wandering back to whatever I was working on. I’m trying to get better about this mindless snacking, but muffins are my weakness! Anyone else have an issue with constant grazing? At least I keep healthy snacks around. Gone are the days where I would eat spoonfuls of Jiffy right from the jar. I tried that last time I was at my Grandma’s house, and it tasted like frosting to me. Seriously, natural peanut butter just tastes SO MUCH BETTER!
Speaking of peanut butter, it makes a great addition to these Oatmeal Raisin Greek Yogurt Muffins. Especially when they’re fresh out of the oven. Trust me on this one. It’s a must try.
This week I’m home visiting my family outside of Charlotte, North Carolina. My parents have a house on a lake here, and I plan on spending a lot of time outside, laying on a floaty, soaking up the end of summer sun. With a side of these Oatmeal Raisin Greek Yogurt Muffins. Because I’m so excited about this recipe, I’ll definitely be whipping up a batch for my family to enjoy!
