Happy Fall! To celebrate my favorite season of the year, I’m creating another version of one of your favorites–energy balls! These apple cinnamon energy balls are grain-free, perfect for an energy boost, and taste like fall in a ball.
As you all know, I’m a huge fan of meal prep. And I love snacks. So it’s only natural that I really love energy balls. They’re the PERFECT snack to meal prep for a busy week and the flavor combinations are endless. As I was browsing the bulk section as Fresh Thyme the other week, as one does, I saw dried apple rings. I immediately knew I needed to make an energy ball recipe using them.
That’s where these apple cinnamon energy balls were born.
They’re made with said dried apple rings, golden raisins, cinnamon, ginger, almonds, and just a little bit of Just Date syrup. Date syrup is a new-to-me product and I’ve found it to be a great replacement for honey or maple syrup in recipes. If you can’t find date syrup near you (they recently rolled out in SOME Whole Foods), then I’d recommend subbing in honey. Maple syrup would also probably work, but it’s a bit more liquid so add a little less to start and see how the consistency is. If you use maple syrup or honey let me know in the comments so I can share with others!
As with all energy balls, these apple cinnamon energy balls take a bit longer to blend together in the food processor than you might expect. But I promise you’ll get there! Just keep blending when it look super chunky and dry, and I promise you’ll get to the consistency below.
If you’d like to, you can make a double batch of this recipe, and save one in the freezer for later. Then, when your first back of SAVE ME I’M HUNGRY! snacks run out, you can dethaw the next and get on with you day. So yeah, these apple cinnamon energy balls also have the ability to halt fights in their track. Just pop one in your mouth when you’re feeling hangry and ahhh so much better.
If you’re looking for some other energy ball recipes here are some of my favorites:
Hope you enjoy these apple cinnamon energy balls as much as I do! Until next week.
PIN THE APPLE CINNAMON ENERGY BALLS FOR LATER
These apple cinnamon energy balls are grain-free, perfect for an energy boost, and taste like fall in a ball.
- 1 cup almonds
- 1/2 cup golden raisins
- 1/2 cup dried apple rings
- 1.5 tbsp Just Date Syrup can sub honey
- 1/2 tbsp cinnamon
- 1/4 tbsp ground ginger
Add all ingredients to your food processor and pulse a few times.
Turn to blend and allow everything to process for a few minutes, pausing occasionally to scrape down the sides of the container. You'll need to blend longer than you think!
You'll know you've blended long enough when the almonds start to release oils and the mixture turns into one big dough ball.
Take one tablespoon at a time and roll into bite size balls.
Store in the fridge (or freezer) and enjoy 1-2 at a time!
