These superfood mint chocolate energy balls are about to become your new favorite snack! With hemp seeds, cacao, honey, and collagen these are the perfect after school treat, mid afternoon snack, or pre-workout as you run out the door!
Last week, these energy balls came in so handy while I was traveling! I took an entire jar with me and knowing I had them as a little snack security blanket made me so happy. As I wandered the airport between flights to get some movement after all the sitting, I was casually eating these babies from a jar. I probably looked a bit weird to those who don’t know what energy balls are, but I don’t care!
The issue with having these Superfood Mint Chocolate Energy Balls on me at all times was that I just wanted to eat them all at once. They’re packed with good for you ingredients, but honestly taste closer to fudge. I’ve been grabbing a few to hold me over between meals or as I’m running out the door before a workout. I’m not one of those people who can workout on an empty stomach, but I also don’t want to eat a heavy meal right before. These energy balls are the perfect compromise.

If you’re going back to school or just settling into your regular routine now that summer is coming to a close, you’re going to want snacks handy. Instead of reaching for a chocolate bar or a bag of chips, these balls will be happily waiting for you in your bag. If you are planning on throwing a jar in your bag to take with you, I’d store them in the freezer beforehand. This way they aren’t just super melty and mush by the time you go to eat them. BUTTTT this did actually happen to me, and I just used a fork and ate little pieces at a time. I wasn’t about to let any of these Superfood Mint Chocolate Energy Balls go to waste.
Let’s go over the ingredients list shall we? You’ve got collagen powder, (I used Vital Proteins but any brand works, or you can omit this!), hemp seeds, mint, honey, cacao, peanut butter (I used Crazy Richards), cashews, and cinnamon. SO MUCH GOODNESS IN ONE BITE! All you have to do is add the ingredients to a food processor, mix it all up, and roll into bite size balls. I like to make mine using about one tablespoon of the “dough”. This way I can eat more in one sitting 🙂
You can also customize the Superfood Chocolate Mint Energy Balls! If you don’t have cashews, sub in a different nut. No peanut butter? Try almond or cashew butter. You can omit the mint and collagen powder as well. Really, just use whatever you have on hand. OR just follow my recipe to get the best tasting energy balls you ever did try.

- 1 cup cashews
- 1/2 cup peanut butter
- 1/4 cup Manitoba Harvest Hemp Hearts
- 1/4 cup cacao powder
- 1 tbsp honey
- 7 mint leaves
- 1/2 tbsp cinnamon
- 1 scoop Vital Proteins Collagen Peptide (optional)
Pulse cashews in a food processor, allowing them to break down before adding other ingredients.
Add remaining ingredients and blend until smooth. Stop every few minutes to spoon mixture down off the sides of the container.
Once smooth and creamy (should be shiny as oils release), scoop one tablespoon at a time and roll into a ball.
Refrigerate until ready to eat!
