When it’s cold and dark outside, I don’t mind spending time in the kitchen deciding what to eat. But when warm weather hits, I want all my time to spent outside. There’s nothing better than a refreshing cocktail or glass of wine in the sunshine after a long day or week.
This slow cooker Greek chicken is perfect for meal prep so you can get outside and enjoy the sunshine.
The chicken is flavorful and juicy from the olives, sun-dried tomatoes and garlic. The easiest meal with this chicken would be stuffed sweet potatoes. If you’re not feeling sweet potatoes, you could also make a power bowl with brown rice and lettuce, or simply make a Greek salad. It doesn’t matter how you eat this Greek chicken, it’s all going to taste good.
I got the idea for this recipe after going to Whole Foods and making a monster salad. Everyone always says the salad buffet is expensive, but I’ve honestly found that I get more salad for less money than somewhere that sells pre-made versions. If you want to get super budget-friendly, this recipe is your new best friend.

Slow Cooker Greek Chicken Sweet Potatoes - easy meal prep with little clean up! Paleo, Whole30, and budget friendly.
- 1 lb chicken breast
- 1/2 cup kalamata olives in oil
- 1/4 cup sun-dried tomatoes
- 1 clove garlic
- 2 sweet potatoes roasted
- 1/4 cup feta optional

Add all ingredients, except sweet potatoes, to a slow cooker.

Cook on high for 4 hours, or low for 8 hours.

Remove from slow-cooker and shred chicken with two forks.

Stuff sweet potatoes with chicken, olives, sun-dried tomatoes, and optional feta. Enjoy!
