Healthy Smashed Sweet Potatoes

Heathy smashed sweet potatoes with green onion, goat cheese and K-Mama Sauce are sweet, spicy, and easy to make. Making them a perfect holiday side dish.

Ingredients

  • 6 medium sweet potatoes
  • 1.5 tbsp olive oil
  • 1/4 cup K-Mama Sauce
  • 1/3 cup goat cheese
  • 1/4 cup green onion
  • salt and pepper, to taste

Instructions

  1. Bring a pot of water to boil. In the meantime, wash sweet potatoes. 

  2. Add sweet potatoes to boiling water and cook for 15-20 minutes, or until a fork can just barely pierce the skin.

  3. While potatoes are cooking, chop green onion and crumble the goat cheese.

  4. Heat the oven to 450 degrees and prep a baking sheet with parchment paper.

  5. Drain potatoes and lay out on a cutting board. Slice potatoes in half and place them on the baking sheet.

  6. Using the bottom of a drinking glass, slowly press down on the sweet potato halves, allowing them to smash down and expand out.

  7. Drizzle sweet potatoes with olive oil and a sprinkle of salt and pepper, then transfer to oven to cook for 30 minutes. Sweet potatoes are done with the edges start to brown!

  8. Remove potatoes from oven and create small indents in the middle using a spoon.

  9. Dress the sweet potatoes starting with a spoonful of K-Mama Sauce, followed by goat cheese, and finally green onion. 

  10. Enjoy!
