A little known fact about me is that I spent the entire summer between junior and senior year of college working on a lettuce farm. That meant getting to the farm by 7 am, and cutting lettuce for hours at a time. Sounds glamorous right? I honestly didn’t mind it that much. I really like being outside and it was a nice break from working inside at a restaurant all summer. And by the end of the summer, I had the BEST tan ever.
SO ANYWAYS the point of this story is that I spent a lot of that summer cutting arugula. As I was making this salad, and taking bites of arugula, I was immediately transported back in time to that summer. This winter salad doesn’t just have those wonderful throwback memories. There’s also clementines, hemp hearts, brown rice, and a tangy tahini dressing.
I love this winter salad because all you have to do is throw all the ingredients in a bowl, and then dig in. Arugula comes ready to eat (other than washing it) and clementines are way easier to peel than other citrus varieties. As far as the brown rice goes, I like to prep a big batch at the beginning of the week, so I have it ready to go when I want it. I made a big batch of brown rice, used a little bit for this winter salad, and saved the rest for later. It might sound like a small timesaving tip, but it really makes a huge difference.
Alright, so other than 10 minutes, here’s what you need for this easy winter salad:
- Brown rice
- Hemp hearts
- Olive oil
Lot’s of flavor, healthy fats, citrus, deliciously spicy arugula. It’s really the best winter salad for your holiday gatherings this year.

- 4 cups arugula
- 4 clementines
- 2 tbsp hemp hearts
- 1/2 cup brown rice
- 1/4 cup extra virgin olive oil
- 1/4 cup tahini
- 2 clementines, juiced
Combine all the ingredients for the salad in a bowl and toss to combine.
Combine dressing ingredients together in a separate bowl.
To eat, drizzle some of the tangy tahini dressing over top of the salad and enjoy!
