It’s a Wednesday night. I’ve been up since 4:04 am, I’ve worked 7 hours, pushed through way too many squats…and my stomach is growling. I think this calls for my go to quick meal. When I worked at Jack Browns everyone always peeked into my Tupperware container and asked what my slush of the day was. It sounds unappealing, but trust me, when your stomach is growling and your whole body is tired, it’s super satisfying and delicious. Sauté your onion and garlic, throw some frozen veggies in there, add some beans, put it all on top of quinoa: bing, bang, boom, dinner time. And you have leftovers for lunch tomorrow, BONUS!
Here’s what you need:
- 1 bag of frozen vegetables
- 1 can of beans
- 1/2 cup diced red onion
- 3 cloves minced garlic
- pre-cooked quinoa
The beauty of this meal is that you can make it a million different ways using whatever you have hiding in the back of your freezer and cabinet! You can use chickpeas, black beans, kidney beans, it really doesn’t matter! As for the vegetables, I prefer a stir fry blend with onions, peppers, and mushrooms. But again, that’s just me. You can also cook everything in vegetable or chicken broth, including the pre-cooked quinoa. For spices, you can keep it simple with salt and pepper or you can make it up as you go and throw in your favorite spices.
