I love a good dip. I also love fruit. This recipe for Sweet & Spicy Strawberry Cherry Salsa combines both of those things. With mint, cayenne, goat cheese, and a honey vinaigrette this salsa is packed with flavor. It also takes 15 minutes to make (just chop and mix) and can be used as a dip, salad topper, or even on top of scrambled eggs. (Sounds weird, but I tried it and it’s delicious!)
My inspiration for sweet & spicy strawberry salsa came while I was wandering around the farmers’ market. A lot of recipe inspiration comes from wandering around different food venues if I’m being honest. I’ve always been someone who bought items based on freshness, sales, and just what looked or sounded good to me that day. Within moderation. Otherwise I would have come home with a cart full of oatmeal creme pies yesterday, but sadly I used some self control and resisted the purchase. If you want me to create a healthy oatmeal creme pie for you all, let me know! They were my favorite Little Debbie snack when I was little.
Okay but back to this sweet & spicy strawberry cherry salsa. Woo, I know that’s a long title, but I wanted you to know about ALL THE GOODNESS when this recipe showed up in your inbox. But wait there’s more! This salsa also has goat cheese, honey vinaigrette, and mint. Seriously, there is so much flavor in this salsa you’re going to wait to eat in 24/7. I just made a big batch yesterday and I’m already down to a few spoonfuls left.
I’ve always been a lover of cherries. I have a vivid memory of walking into Six Flags with a huge handful and challenging my Dad to see how far I could spit out the pits. Or maybe it was my friend? I don’t know, I was little. THE POINT IS I love cherries and this recipe really highlights their deep, sweet flavor. Combine cherries with strawberries to bulk up the recipe, then throw in goat cheese, mint, honey, and cayenne. Man oh man. All my favorite flavors in one recipe.
A note about the use of goat cheese–I know I’ve talked about how I have issues with dairy here on the blog before. My stomach doesn’t handle it in large quantities, but I usually pretend to forget that when I want ice cream. Additionally, dryer cheese like feta, goat cheese, and blue cheese are lower in lactate, making them easier for my stomach to digest. SO, when I’m really craving that creaminess that cheese brings to a recipe, I fall back on a dryer style. But, if you really can’t handle cheese at all, you can leave it out of the recipe altogether. You might try subbing in avocado instead? If you do let me know how it goes!
