When I told my mom I was making this slow cooker turkey chili with red curry, she told me I couldn’t call it chili. Her reason being that I didn’t use chili powder in the recipe. And she’s right, I didn’t. But I wanted you all to see the name and immediately get an idea for what I was presenting you with. So sorry Mom, I overruled you and I’m keeping chili in the name. Even if I don’t meet the “chili” criteria.
I’m a big fan of this slow cooker turkey chili because you just throw everything in your slow cooker, and you’ve got then meal prepped and ready for the week. I kept this recipe grain free and dairy free. If you want to make it vegetarian, you could leave out the ground turkey and add an extra can of garbanzo beans instead.
Since I saved so much time on meal prep this week by making this slow cooker turkey chili, that means I had extra time for a pretty lengthy Netflix binge. Four hours to be exact. I watched the entire series, Retribution, from start to finish. It’s about two families that live in the countryside of Scotland and a double murder. I LOVE murder mystery shows. They suck me in so quickly. So good thing I had the time this weekend otherwise I would have shirked a bunch of things on my to-do list. Which would have made me a very anxious Emily come Sunday night.
If you want to make more time for chilling on the couch or doing other fun things, you should make this slow cooker turkey chili with red curry paste pronto. - 1 lb ground turkey
- 2 green or red peppers chopped
- 1 cup carrots chopped
- ½ cup red onion diced
- 1 can diced tomatoes try to get plain, definitely avoid fire roasted
- 1 can chickpeas
- 4 tbsp red curry paste
- 2 tbsp garlic powder
- ½ tbsp crushed red pepper
- ½ tbsp paprika
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
- Jalapeno for garnish optional
Add everything to a crock pot, cook on low for 8 hours.
