Enter these slow cooker Korean pork meal prep bowls! They’re packed with flavor from lime juice, sesame oil, and Korean hot sauce. Plus, with minimal hands on time you’ll be fueled and ready for the week without spending a ton of time in the kitchen!

Each week I think to myself, THIS will be the week that is less busy than the last. THIS will be the week that I have some down time and can catch up on all the household things I’ve been putting off. THIS will be the week where I can chill and read a book just for the heck of it.

I’m grateful that today is the day I teach my first yoga class. I’m grateful that I have friends that are up to cool shit and I get to go and support them.

I can’t get over how good the pork turned out in this recipe. I may or may not have been sneaking little pieces here and there as I was shredding it post slow cooker. It’s sweet, it’s spicy, it’s tangy. And it’s all done while you’re getting ready for a busy week ahead. I love good food, but I don’t have time to devote to an entire day in the kitchen. That’s why meals like these Korean pork meal prep bowls come in handy.

PIN THE SLOW COOKER KOREAN PORK MEAL PREP BOWLS FOR LATER!
Slow cooker Korean pork meal prep bowls that are packed with flavor from lime juice, sesame oil, and Korean hot sauce, and minimal hands on time to fuel you during a busy week!
- 1 pound pork shoulder
- 1/4 cup K-Mama Sauce
- 2 tbsp soy sauce
- 1/4 cup sesame oil
- 2 tbsp lime juice
- 4 cups broccoli, steamed
- 2 sweet potatoes, roasted
- 4 tbsp sesame seeds, garnish
- 1/2 cup crushed peanuts, garnish
Place pork shoulder in the bottom of the slow cooker. If you bought yours with twine around it, take that off before placing in the pot.
In a small bowl, whisk together all of the ingredients for the marinade (K-Mama sauce, soy sauce, sesame oil, and lime juice).
Pour marinade over the pork, place lid on your slow cooker, and set on low for 6-8 hours. I don't recommend cooking on a higher setting for a shorter amount of time as this tends to make the meat more rubbery than tender and easy to pull apart.
When time is up, remove pork from the slow cooker and place on a cutting board. Using two forks, shred the pork by pulling apart in opposite directions.
Transfer 1/4 of the pork to individual meal prep containers. Add in 1/4 cup broccoli and 1/2 a sweet potato. I like to slice my sweet potato into wedges.
Sprinkle 1 tbsp sesame seeds and 2 tbsp crushed peanuts into each container.
When ready to eat, drizzle with additional K-Mama sauce and enjoy!
