Not going to lie, this nutty roasted red pepper hummus came about accidentally. Sometimes that’s where the best recipes come from though. Do you agree? Growing up, those “a la mama” meals were the ones we looked forward to most.
Maybe there’s a lesson to be learned from these “mistake” recipes. By embracing my mistake, I found a nutty, flavorful dip for veggies, a hearty addition to my dinner bowls this week, and an awesome recipe to share with you all!
My challenge for you this week is to find a way to turn a mistake into something positive.
Maybe you didn’t run as far as you planned or you fell asleep before checking all the items off of your to-do list. Instead of being hard on yourself for not following through exactly as you meant to, embrace the mistake and pride yourself for listening to your body’s needs.
This weekend, I took time to relax an recover. It’s been a stressful and surprising week for many of us with the results of the election, so taking time to process and heal is important. Even if the election came out how you wanted it to, change is coming. Take time to rest and recover when you want to, instead of floundering through another workout or staying up an extra hour to kinda sorta check one more item off your list.
And in that recovery time, make some Nutty Roasted Red Pepper Dip!
Ingredients:
- 1/2 cup cashews
- 1/2 cup chickpeas
- 3 roasted red peppers
- 1/4 cup olive oil
- 1/2 teaspoon sea salt
- 1 tablespoon crushed red pepper
Directions:
- Combine all of the ingredients in your food processor.
- Continue blending until smooth.
- Add more olive oil to reach the desired consistency.
- Spread the dip on vegetables, dollop on top of your quinoa bowls, or dip your tortilla chips in it.
