I know I know, it’s the time of year when all you want is the real deal cookie. And I feel ya! But sometimes you need a break from the insane amounts of sugar, and you want to grab something that’s going to give you energy to deal with your crazy family. Enter these peppermint patty energy balls. They’re sweetened with dates, packed with healthy fats, protein, and fiber, and taste like the real thing, minus all the weird ingredients.
I don’t know why I’ve never done a recipe for peppermint patty energy balls before. I mean, I already have at least six other energy balls on the site, and I LOVE peppermint patties. Well, glad that I’m finally changing that with these babies.
These peppermint patty energy balls are a great snack to take along with you for your holiday traveling. I’m hopping on a plane Thursday night to go back east, YAY!, and I’ll definitely be bringing a jar of these with me. I’ve travelled wth my chocolate energy balls in the past, and they’re really a lifesaver. I like to freeze my energy balls before traveling with them so they hold their shape a bit better on the road.
These peppermint patty energy balls are a lightened up version of the real deal York Peppermint Patty. (ps as I’m writing this Mona, my cat, just decided to lay across my arms so I can only move my hands on the keyboard. I guess she really wants me to get my work done so I can enter holiday vacation mode!) They’re a touch sweet, with the rich flavor from cacao powder and coconut flakes, with that nice bright taste from the peppermint essential oil. Be careful, there’s no way you’re going to be able to limit yourself to one. I recommend rolling them in smaller balls so you can munch on a few without ending up with a stomach ache from completely overdoing things.
When you make these peppermint patty energy balls, be patient! It takes a while for the almonds and coconut flakes to break down enough that they stick together. It’s a constant back and forth process of blending, scraping down the sides, and blending some more. But don’t worry, the end result is 100% worth the effort.
Here’s what you’ll need to make the peppermint patty energy balls:
