When I started thinking about what recipe I wanted to share for Mother’s Day, I immediately knew I wanted strawberries to be involved. My mom always asks for an activity, instead of a gift, for Mother’s Day. For a few years, her activity of choice was strawberry picking. Some years there weren’t any strawberries ready to pick, others it was so hot that the strawberries weren’t any good. But no matter what, we’d get in the car and drive around to berry patches, looking for some that were good enough to pick. My mom can be pretty stubborn, and so can I, so we drove around to a few patches, hoping to strike strawberry gold.
Since I can’t be with my mom this Mother’s Day, I decided to make this recipe and dedicate to her instead. My mom is a huge reason this blog even exists. First of all, she’s the reason I was even born. So there’s that. But more specific to the blog, she taught me how to cook. I know I’ve mentioned that before, but it’s something that I’m so grateful for. Whenever I have a question about a recipe, I call her. Sometimes she doesn’t have the answer, but we talk through it, and are usually able to come to a conclusion.
For her and I, cooking is a form of stress relief, it’s creative, and it’s something we love. I called her yesterday and she was making molasses cookies, just because. No event to go to, no one coming home to visit (which by the way sorry I couldn’t surprise you this year mom!), just baking because it’s something she enjoys doing. That’s another quality I got from my mom. Do something because you want to, not because someone else tells you to do it. It can be both a good and bad trait…depending on the person and the situation.

PIN THE ONE BOWL WHOLE GRAIN STRAWBERRY MUFFINS
These one bowl whole grain strawberry muffins are just in time for strawberry season! They're gluten free, refined sugar free, and protein packed thanks to Greek yogurt. PLUS one bowl means easy clean up. Make a batch for breakfast this week!
- 1 cup plain Greek yogurt
- 1/4 cup coconut oil, melted and cooled
- 1 egg, at room temperature
- 1/2 cup honey
- 1 tsp vanilla
- 1 3/4 cup whole wheat gluten free flour I used Bob's Red Mill
- 1 tsp baking soda
- 1 cup diced strawberries I used fresh, frozen may also work
Preheat oven to 425 degrees.
Combine all the wet ingredients in a bowl and stir well to combine.
Mix in flour and baking soda, then fold in strawberries.
Line muffin tins with baking cups, then spoon in batter, filling each tin 3/4 of the way up.
Transfer to the oven to cook at 425 degrees for 5 minutes, then without opening the oven, lower to 375 degrees and cook for an additional 15 minutes. Watch closely the last 5 minutes, as oven time may vary.
Remove from the oven, let cool, and enjoy! Refrigerate the rest until ready to eat.
