Happy New Year everybody ! Let’s kick it off with this grain free paleo breakfast hash with kimchi, shall we? This dish is super easy to make, perfect for meal prep, grain free, and super filling. I make meals like this at least once a week, but taking a little extra time to get those potatoes super crispy is 100% worth it. Trust me.
I judge my favorite brunch spots based on their crispy potatoes. When I was at James Madison University in Virginia, I would go to the Little Grill Collective for breakfast every chance I got. And without fail, I’d order their spicy crispy potatoes. Think perfectly sized chunks of potatoes, crispy on the outside, perfectly cooked on the inside, and doused in some yummy Cajun spices. And then loaded up with ketchup and maybe even more hot sauce if you’re anything like me. Hungover Emily loved those potatoes very much. Whenever someone is even remotely near Harrisonburg, I insist that they make a pit stop and get themselves some spicy potatoes. Really anything on their menu, but DEFINITELY the spicy potatoes.
This grain free paleo breakfast hash is my take on the Little Grill’s breakfast potatoes. I’ve tried and tried to find another brunch spot with potatoes like theirs, but I was continuously let down. So it was time to take matters into my own hands. Perfectly crispy potatoes comin’ atcha.
If you’re doing Whole30 this month, this is 100% approved, minus the hot sauce. Maybe sub in from Frank’s Red Hot sauce instead. I did Whole30 last January, and I know for a fact that has zero sugar in it. Whatever you do, don’t skip the hot sauce on this. It ties everything together.
I’m also a huge fan of kimchi, and always looking for more probiotics to help out my weird digestive system, so I threw those in here too. I got my kimchi from Trader Joe’s this time around, but the best kimchi I’ve ever had, BY FAR, has come from a farmer’s market. Amazing flavors, super fresh, and just the right level of sour.
This recipe is probably one of the easiest I’ve ever posted on Get Well With Em. But sometimes you just need some pretty pictures to gently nudge you into the kitchen to make those crispy breakfast potatoes. They’re really the perfect base for the grain free paleo breakfast hash.

This Grain Free Paleo Breakfast Hash with Crispy Potatoes is perfect for meal prep, grain free, sugar free, SUPER easy to make, and packed with protein. Upgraded with some kimchi & Korean hot sauce, this recipe will make you skip brunch for breakfast at home.
- 1 lb red potatoes
- 2 tbsp olive oil
- salt and pepper, to taste
- 3 green peppers, sliced
- 1 bag spinach
- 1 egg
- 2 tbsp kimchi
- 1 tbsp K-Mama Sauce
Preheat your oven to 400 degrees.
Like a baking sheet with aluminum foil and spray with non-stick cooking spray.
Chop potatoes into quarters and spread out evenly on your baking sheet.
Drizzle with olive oil and a heavy dose of salt and pepper. With clean hands, mix so that all the potatoes have a bit of olive oil, salt, and pepper.
Place sheet in oven and roast for 20 minutes.
While the potatoes are cooking, chop your peppers and wash your spinach.
After 20 minutes, flip the potatoes then place back in the oven for an additional 15 minutes.
Spray a frying pan with non-stick spray and warm up over medium heat. Add your green peppers and sauce for 5-7 minutes, or until they start to soften up. Push your peppers to the side, and add your egg. Fry to your liking, I recommend sunny side up. Once your egg is almost done, add 1 cup spinach to the pan.
Once potatoes are crispy on the outside and can be pierced with a fork, remove from the oven.
Layer in your bowl with potatoes on the bottom, then spinach and peppers, next your egg, and finally top with kimchi and a drizzle of K-Mama Sauce.
