I’m back with another recipe showing mashed potatoes the love they deserve, and this time it’s in breakfast form. These breakfast mashed potato cups have turkey sausage, chives, and eggs. They’re a filling, tasty breakfast option, all in one easy, on-the-go bite.

Going into my final weekend of yoga teacher training, I’m really glad I have the breakfast mashed potato cups at the ready in my fridge. Don’t get me wrong, I have loved every minute of teacher training, but waking up at 6:45 am on the weekends is challenging. I can’t wait to have a weekend to just wake up and chill out, instead of rushing out the door as quickly as possible.
Having these breakfast mashed potato cups prepped for the weekend means 10 more minutes I get to stay in my bed. The plan is wake up, make my matcha, warm up a couple of these breakfast cups, then head out. Easy peasy. If you’ve got a busy week ahead, take 30 minutes to make these and your future self will thank you.

But back to these breakfast mashed potato cups! Take your leftover mashed potatoes, or in my case Old Home Foods Garlic Mashed Potatoes, and mix them in a bowl with turkey sausage, chives, and eggs. From there, just scoop them into muffin tins, pop them in the oven for 30 minutes, and you’ve got breakfast for the week. It couldn’t be any easier. And there’s so many variations you could do. I think next time I make them I’m going to add spinach and sun dried tomato. How good does that sound?!

PIN THE BREAKFAST MASHED POTATO CUPS FOR LATER
These breakfast mashed potato cups use leftover potatoes, turkey sausage, and chive to create an easy breakfast to prep for a week of eats!
- 2 1/2 cups mashed potatoes I used Old Home Foods
- 1 cup turkey sausage, diced and cooked sub your favorite sausage
- 1 tbsp chives, diced
- 2 eggs
Preheat oven to 350 degrees. Line muffin tins with liners. *non-stick cooking spray won't work for these.*
Combine all ingredients in a medium bowl, and stir well to combine.
Spoon mixture into 12 muffin tins.
Transfer to the oven and cook for 30 minutes.
Remove from the oven to cool and store in an air tight container in the fridge until you're ready to eat!
