After a brief hiatus thanks for my computer being stolen, I’m back with a 10-minute vegetable stir fry. Using K-Mama Sauce, crunchy green vegetables, brown rice, and scrambled eggs, this is a healthy, quick and easy recipe to whip up for a busy weeknight dinner!

Before I get into the 10-minute vegetable stir fry recipe lets back up for a second. Last week, I was forced to take a week off from the blog after someone broke into my car in my yoga studio’s parking lot. They smashed my passenger side window and took my backpack containing my computer, wallet, external hard drive, a bar of raspberry dark chocolate, and a few of my most favorite chapsticks. I already talked about this on Instagram a bit, but to be honest, I wasn’t as upset as I thought I would be. Yes, it sucked. But I also knew that my only choice was to move forward and figure out the next steps.
In the past I may have played the blame game. Or gotten stuck in the negative thought cycle of it not being fair. This time I chose to take a deep breathe and just move forward. And honestly, I’m so glad I did. While it was a little bit stressful to not always have immediate access to a computer, it would have been way more stressful had I allowed my thoughts to negatively spiral. I’m proud of myself for how I handled things, and I just wanted to share that little lesson with you all. Pause, take a deep breathe, assess the situation, and move forward calmly instead of reacting from a negative place.
Now to this 10-minute vegetable stir fry. When I think of stir fry, I think of a ton of vegetables and amazing flavors. This easily meets both of those requirements. You’ve got the tasty saucy K-Mama flavor, combined with crunchy snap peas, and great big bites of broccoli. I think broccoli is probably my favorite vegetable. Roasted, steamed, stir-fried, it tastes great no matter how you cook it. That being said, not a huge fan of raw broccoli. But it’s cooked in this 10-minute vegetable stir fry, so no worries there!
By cooking the brown rice ahead of time, you’ll be able to get dinner ready and on the table in 10 minutes flat. Just chop and throw everything together in a pan, scramble some eggs, add K-Mama Sauce, and BAM delicious and flavorful dinner is ready to go.
I know that you are all going to love this 10-minute vegetable stir fry as much as I do. Plus, if you aren’t huge fan of broccoli or snap peas you can sub in your favorite vegetables. Using K-Mama Sauce, crunchy green vegetables, brown rice, and scrambled eggs, this 10-minute vegetable stir fry is a healthy, quick and easy recipe to whip up for a busy weeknight dinner!
- 2 cups snap peas
- 2 florets broccoli
- 3 eggs
- 1 clove garlic, minced
- 3 tbsp sesame oil
- 1 1/2 cups brown rice, cooked
- 1/4 cup Original K-Mama Sauce
Wash and chop broccoli florets into bite size pieces then add to a sauce pan with 2 tbsp water. Cover, then place on the stove over medium heat. Keeping the lid secure, allow the broccoli to steam until easily speared with a fork.
Meanwhile heat a separate skillet over medium heat and add 1 tbsp sesame oil.
Scramble 3 eggs in a small bowl with 2 tbsp water, once fully whisked together, transfer to frying pan. Cook until fluffy, stirring constantly for around 3 minutes. Then transfer eggs to a small plate until needed again later.
Add 2 more tbsp sesame oil to the pan, then add broccoli, snap peas, and minced garlic. Saute for 3 minutes, or until they stark to turn a darker green and the garlic becomes fragrant.
Once vegetables are cooked, add 1 1/2 cups pre-cooked brown rice. Saute for 2 minutes to allow the flavors to combine.
Add scrambled eggs back to the pan along with 1/4 cup K-Mama Sauce. Stir well to combine.
Remove from heat and enjoy!
