This week’s theme is a vegetarian meal prep menu! I’m really excited to share these recipes with you all. Lately I’ve been feeling the need to switch up my meals. I had a nasty stomach bug lately, and my stomach just wants simple foods while I recover. For me that means vegetarian. Give me all the vegetables and easy to digest meals! So let’s get started with you vegetarian meal prep menu, shall we?

First up, breakfast! 

This Cherry & Orange Breakfast Parfait  from Rachael’s Foodie Life looks so good! I’ll probably make mine with dairy-free yogurt, because dairy and I don’t always get along. Knowing that I can throw these ingredients into mason jars at the beginning of the week and then be set to eat when I wake up in the morning makes me so happy. Plus I’ve been on a huge orange & cherry kick lately, in case you couldn’t tell from this salsa I posted on Monday! Needless to say, this parfait earned it’s place on my vegetarian meal prep menu!

Moving on to snacks! 

I shared these nut-free no bake apricot energy balls on Get Well With Em last week and I can’t get enough of them! If you don’t like apricot, you can sub in figs, dates, or whatever other dried fruit you like!

Lunch

Last but not least, dinner!

I would never think to include avocado in a pasta sauce, but Healthy Helper Blog is a genius! Her Tomato Avocado Pasta Sauce is vegan, can be served raw, and would work really well over black beans and veggies, or tossed with your favorite pasta! I love recipes that you can get creative with, so I’m really excited to play around with this one!
