When I set out to make these apricot energy balls, I wanted them to be bright and summery. While I love the no bake chocolate bites I’ve shared, summer makes me want foods that just taste light and fresh. Less comfort food and more cooling foods. You know what I mean?

I also decided to switch things up and leave the nuts or nut butter out of these energy balls. Nothing against them, just wanted something a little different this time around. Sunflower seeds to the rescue! They give you the same texture, but are allergy friendly. Sunflower seeds also have more magnesium, iron, and B-6 than almonds or cashews. It’s always good to add a little variety to your diet to make sure your hittin’ up all the nutrients.

Lately I’ve been slacking on my meal prep. After moving and then unpacking and organizing, I kept running out of time in the day. I know, I know. Who am I to say I don’t have time for meal prep when I preach so often how important it is?? Well, lucky for you and me, these apricot energy balls take approximately 10 minutes to mix and roll. We’ve all got an extra 10 minutes. I see you scrolling Instagram while watching one more episode on Netflix. No shame, just hit pause for 10 minutes, make these apricot energy balls, and get back to it.

I also threw some ginger in for a little extra tanginess and punch for your tastebuds. Anyone else love ginger as much as me? If I had crystallized ginger I’d roll these energy balls in them. Speaking of rolling the energy balls–your batter should be slightly sticky once your done mixing everything together. If they’re not sticking when you go to roll them, add a little bit more honey. Additionally, if you want your balls to be a bit sweeter, you can add mini chocolate chips. The beauty of these no bake apricot energy balls is that they’re customizable based on your personal preferences!

Ingredients
  • 1 cup sunflower seeds
  • 1/2 cup dried apricots no sugar added
  • 1 tbsp honey
  • 1 tbsp ginger
  • 1/4 cup unsweetened coconut flakes
Instructions
  1. Add sunflower seeds and dried apricots to your food processor. Blend until combined.

  2. Add honey, ginger, and coconut flakes. Blend until combined.

  3.  Test stickiness of mixture. If texture is too dry, add a little bit more honey. Option to add in chocolate chips or cacao nibs as well.

  4. Roll one tablespoon of the "dough" at a time. You can wet your hands if it's too sticky.

  5. Place energy balls in a jar and refrigerate until you're ready to eat!
