This easy healthy summer snack round up is full of recipes that you can grab and go during busy summer days. I don’t know about you all, but that is EXACTLY what I need lately.
I’ve been going non-stop all summer. Take today for example. It’s 10:39 pm, this round up is going live tomorrow at 5:00 am. I’m not a last minute person, but this is the first chance I’ve had to sit down and write the post for you all day. SO working with what I’ve got here.
When I have busy days like I had today, have an easy healthy summer snack on hand is so important.
The recipes that I’m sharing today fit the bill perfectly. Whether I’m grabbing a muffin before running off to meet someone in the morning, or throwing the gingerbread balls in my bag to grab between jobs in the afternoon, I’ve got to be prepared.
Let’s start out with these Strawberry Walnut Protein Muffins. I’m working on a new muffin recipe for you all, but until then, these muffins are delicious! They’re made with Kodiak Cakes and protein powder, so they’re chock full of fuel for your long summer days. And jokes are Charlie and the Chocolate Factory 🙂
Next, my Grain-Free Gingerbread Cookie Balls. Otherwise known as energy balls. While I did make these around Christmastime, they’re just as perfect for summer! I like to keep mine in the freezer and then pull some out for a chilled, refreshing, easy healthy summer snack.
Last, but definitely not least, my Copycat Hail Mary Chocolate Coconut Macaroons. True story, I had a couple friends over to make dinner together last week, and we devoured my stash of these. They’re so addicting, and with the healthy fat from the coconut and just a little bit of added sugar, there really is nothing to feel bad about here. Plus, by making these at home you save yourself a bunch of money versus the store bought version. I’m all about that!
